Flying High with Charm The first taste is what gets you and then you’re hooked. I imagine that was by design when The Meddlesome Moth was still in the cocoon stage. Restaurateur Shannon Wynne, with partners Keith Schlabs and Larry Richardson, did something special with this new spot.
Moth is located in Dallas’ Trinity Design District, on Oak Lawn at Hi-Line. They feature an unrivaled beer menu featuring 40 draught beers (30 mainstays with 8-10 rotating usually on Wednesdays). In addition, more than 85 bottles complete the experience.
Keith Schlabs is all smiles when seeing customers asking and learning about beer from around the world. “Any given night, lots of beers on the tables from Belgium ales or darker ales while pilsners are still popular, tastes and preferences are changing.” And that’s a good thing for Schlabs, a notable connoisseur with hours logged throughout pubs all over the world.
You can hear his enthusiasm when he discusses his overseas experiences. Shannon Wynne and Schlabs met up in 1995 to help open the hugely successful Flying Saucer. Together, they opened 16 throughout the US. They traveled to places like London and Scotland and, “The pubs…oh the pubs…” Keith recounts. “When you visit Young’s Pubs of London, the experience was to go and eat…and you’re there … and it’s NOT a quick in and you’re out…we are talking about hours!” That’s when their idea was off and running.

Schlabs remarks it is their relationships that have contributed to their success and their devotion to promoting the finest beers from Breckenridge, Avery, Stone, Dogfish Head and The Young’s Family of London. You will actually see this through the upcoming events that will be taking place.
